White Chocolate Pecan Lemon Cookies

Every year I get together with a lady friend of mine to do holiday baking. It’s been our tradition now for 8 years or so. We are always on the look out for new recipes to try. I discovered this recipe a few years ago. I made them over the weekend and forgot how amazing they are. I thought I’d share them for the holidays when potlucks are in demand.


2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 cups white chocolate chips

1 cup of chopped pecans

2 tablespoon lemon juice

1 teaspoon lemon zest

PREHEAT oven to 350° F. COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 10 to 12 minutes or until golden brown.

Servings: 60 cookies (5 dozen) or 1-2 dozen for larger cookies
