Coconut Brussel Sprouts with Squash

I don’t know about you, but I’ve pretty much hated brussel sprouts my whole life. I have been experimenting with them to see if I could rid the bitterness I hate so much. I came up with a recipe by accident that I LOVE LOVE LOVE. These make me want to do the happy dance!

 

 

I use a 9 x 13 pan. 

1 Large Bunch of Brussel Sprouts

1 Medium Butternut Squash

2 Tbsp of Olive Oil

1/2 – 3/4 Cup of Shredded Sweetened Coconut

Combine in a pan, roll veggies around in olive oil and stir in coconut. Roast veggies for 25-30 Mins @ 425 degrees

That’s it. I don’t salt it but you can. I find there is so much flavor to it, that it doesn’t need much. Tell me what you think!

    Roasted hot and fast is the only way to eat Brussels Sprouts, no matter what else you mix in. To make them unhealthy, cook your bacon on a cookie sheet in the oven, and then use the same cookie sheet with some of the grease removed, but with a good portion to cook the Brussels Sprouts in. MMMMMMMMMMMMMMMMMMMMMMMMMM.

    BTW – Buy butternut squash at Costco. It’s already chopped for you and you just gotta roast/cook it.
