Coconut Lime Super Greens

OMG! This turned out to be the most amazing way to eat the super greens that don’t always taste so good on their own.

Since most aren’t familiar with Chard or Kale, and even what to do with it; I will be your guinea pig! I love the stuff but get bored eating it raw or roasted. So, I concocted this on the fly and the men in the house were talking hours later about how they wanted more! I don’t know about you, but I’ve never seen a man excited about green vegetables.

So here it goes… Enjoy! mmmm mmmm mmmm!!!!

1 Bunch Kale (remove the stems, tearing into bite size pieces)

1 Bunch of Swiss Chard (roll and cut into small strips)

1/2 C Sweetened Coconut

2 Tbsp Lime Juice

Steam the veggies until tender. Combine all ingredients in a separate bowl and serve!

    Kale and Swiss Chard aren’t usually on my menu, but this sounds like it might be good. I love the picture with the lime in the coconut.
